Recipe | Honey-baked peaches, marscapone & pistachios

Recipe | Honey-baked peaches, marscapone & pistachios | These Four Walls blog

One of the great joys of this time of year is the bounty of just-ripe summer fruit, and every morning I walk past grocery shops brimming with plump strawberries, juicy-looking plums and a rainbow of colourful berries. Peaches are perhaps my favourite, though – I have fond memories of devouring them at the end of the garden as a child, their sweet nectar dribbling down my chin, and as soon as I bite into them I can almost feel the sunshine on my skin.

As you can imagine, I was delighted to see peaches taking centre stage in the latest seasonal recipe from Kym of beautiful food blog On the Plate. Her dish pairs baked peaches with creamy marscapone cheese, crunchy pistachios and warming kick of cinnamon, enhancing rather than overpowering their delicate flavour. It’s the perfect summer treat: simple, delicious and, because it uses honey rather than added sugar, I’m going to say healthy, too…

Ingredients (serves 4)

  • 4 ripe peaches, halved and stoned
  • A knob of butter
  • 2 cinnamon sticks
  • 4tbsp honey
  • 100g pistachio nuts, roughly chopped
  • 250g mascarpone (1 standard-sized tub)

Method:

  1. Preheat the oven to gas mark 4 / 180°C / 160°C fan.
  2. Grease an oven-proof baking dish with the butter and nestle the peaches into the dish, flesh side up.
  3. Drizzle the honey over the peaches and add the cinnamon sticks.
  4. Bake in the hot oven for 15 minutes, then remove and spoon over the honey from the baking dish. Bake for a further 15 minutes until golden.
  5. Serve with a generous scoop of mascarpone, a drizzle of honey from the dish, and some chopped pistachios.

I’ll share another wonderful recipe from Kym next month. And as always, you’ll find plenty more inspiration over at On the Plate.

Snaps from a lovely long weekend in leafy Richmond Snaps from a lovely long weekend in leafy Richmond, West London. I've spent many happy times there over the years as one of my closest friends lives there, but she's about to move house. So, Chris and I made the most of our last visit before she relocates - and the weather was certainly kind to us!

Some photos of the gorgeous @a.__gallery, which I Some photos of the gorgeous @a.__gallery, which I visited on a recent trip to the Netherlands. Isn't it beautiful? Calm, textural and layered, with handmade pieces by an array of independent artists and artisans.

I've also interviewed Holly, founder of the gallery and interior design studio @avenue.design.studio, on my blog. I've always admired the elegant, timeless spaces she creates, and the way she reflects the architectural context of each setting. I first met her in person last year, when I featured her own home in my book, and I've since worked with her on another exciting project that I can't wait to share soon...

I missed the opening event for this last year, so it was great to finally have a look around in person. The light is stunning, as is GUBI's selection of contemporary and classic designs - including the sculptural and futuristic F300 lounge chair, first designed by Pierre Paulin in the 1960s and recently relaunched.

Eight years ago today. Carousel posts didn't exist Eight years ago today. Carousel posts didn't exist then so I'm using our anniversary as an excuse to share some of my favourite wedding photos.

I have so many happy memories from the day, but what I remember the most is all the laughter. And the funniest best men's (Chris had four!) speech I've ever heard. I wish we'd had a videographer just to capture that.

Anyway, thanks @small_round_things for the last eight years - and for the 13 before we actually got around to tying the knot!
